When it comes to the health benefits of resistant starch – its undeniably one of the most underrated, unknown and yet to be discovered functional foods in the world. While regular bananas consumed by the mass market such as Cavendish or Plantains still contain resistant starch (they must be green) they only contain a mere half the resistant starch as their cousins known as Lady Fingers. We use green bananas and there is no sugar. Ripe bananas contain up to 4 teaspoons of sugar.

I have just read that heated (cooked) green banana/flour lose the beneficial resistance. It would be great if you could make that very clear so that people like myself don’t think that eating banana flour cupcakes is adding resistant starch to our diet even though is does make yummy cupcakes!

Hey Karen, you can absolutely use our Resistant Starch in cooking. But we mostly recommend our baking flour for cooking instead. When heated Resistant Starch cools down, it reforms to it’s original state. I hope this helps! Have a wonderful day. – Karina

Meaning you are still getting the exact benefits you were getting before it had been heated. Banana flour is still incredibly good for you once it has been heated and cooled. Hi, I was wondering why you have to let the Resistant Starch sit for a few minutes before consuming? Also if I have smoothies for breakfast, can I add it to the smoothies before I blitz it in the Nutribullet or should I add it after the smoothies has been blitzed?

Thank you for your comment. It’s best to let the Resistant Starch sit for a few minutes if you’re taking it just in water/juice as it can absorb some of the water, making it less grainy to swallow.
