ROBERT Watkins reckons his thumbs are ready to fall off, he’s been peeling so many bananas.
The Tableland farmer has been flat out this week trying to keep up with the booming public interest in his ground-breaking gluten-free flour made from the starchy pulp of lady finger bananas.
The Mt Uncle farm at Walkamin is waiting for patented machinery to arrive so its output of the innovative flour can grow to a commercial scale in coming months.
“We’ve had so much interest in it – people have been marching in asking about the flour,” Mr Watkins said. ……..
