WEEKLY production of the groundbreaking Mt Uncle Banana Flour will jump from 300kg to 10 tonnes after a landmark deal between Mareeba farmer Rob Watkins and a Japanese company.
Mr Watkins’ company, Natural Evolution, invented the gluten-free flour made from lady finger bananas and has now pioneered a production process that can mass produce the flour and also meet Japan’s strict food safety guidelines.
The process can take the green bananas and mechanically process them into a powder in 25 minutes.
