Hot Cross Buns - Natural Evolution All Purpose Gluten Free Dough Mix
- 2 x 8gr sachets of dry yeast
- 1 1/4 cup warm milk
- 1/4 cup sugar
- 454gr Natural Evolution All Purpose Gluten Free Dough Mix
- 1 teaspoon of ground cinnamon
- 1 teaspoon of ground mix spice
- 1 teaspoon of salt
- 60grams of butter
- 1 cup of sultanas
- 1 cup of dried cranberries (craisins) or 1 cup of mixed fruit
- 2 eggs
- 1/3 cup rice flour or corn starch for crosses
- apricot jam for glazing
Method
1. Whisk yeast, milk and caster sugar until the sugar dissolves. Set aside for 10 minutes. Mix Natural Evolution All Purpose Gluten Free Dough Mix with cinnamon, mixed spice and salt into a large bowl. Use your fingertips to rub in butter.
2. Stir in sultanas, cranberries (craisins or mixed fruit), eggs and yeast mixture. Turn dough onto floured surface. Knead 5 mins. . Shape into 12 balls. Put onto 30cm x 20cm greased baking tray. Set aside in a warm place for 45mins
3. Preheat oven to 180°C. Bake for 25 minutes. Combine rice flour or corn starch with 1/4 cup (60ml) water to make a thick paste. Remove buns from oven and pipe crosses onto the buns. Return to oven and bake for a further 10 minutes. Brush buns while warm with jam.
